I think OCxCanon CAN indeed work if it's done correctly. As long as the canon character is not OOC, the OC is a well-done, it fits well into the storyline, and the canon character doesn't already have a canon love interest - meaning that the love interest and the canon character has to have been admitted by the characters themselves or the creator to be in love (i.e. the InuyashaxKagome coupling from Inuyasha is canon; the SesshomaruxRin coupling is not canon).
Let's go ahead and take the above (Inuyasha) as an example regarding fitting into the plot; romance is about a good 40% of the plot. So, to write a good story of OCxCanon, the romance between them would have to come up a lot, but not be the central part of the story.
To keep the canon character OOC, we'll again use Inuyasha as an example; say one pairs their OC with Sesshomaru. To keep him in-character, one would have to somewhat downplay the romance and take advantage of just the little things. In love, he would be silently protective, protecting his love without even giving the notion that that's what he's doing. He wouldn't admit his feelings lightly, and the relationship would have to undergo a huge amount of development in order for him to even admit it to himself, let alone the OC. When it comes to romantic actions, aside from the protection, I imagine the most they'd really do for a while is possibly hold hands, or him allowing her to hug him and other small touches (caressing, kissing, holding, etc.). All of this, I think, would be in-character.
As for a well-written character, I could write pages upon pages on how to do that, but I doubt I could describe it very well. Instead, I suggest you google "well written OCs"or something of the like, and research for yourself how to create a good OC.

Agree with you here. Whenever I do an OC x Canon shipping, I at least try to develop the relationship on how it works.
